The background
What this theme sets out on where food comes from, before any session.
This theme's background reading was rewritten by Swechha in September 2026 for Indian classrooms and in plainer language. It deliberately states no statistics: nothing on Indian agriculture, nutrition or food waste has been read from a primary source for this compendium, so the chapter teaches with examples instead of numbers. The global figures the manual carried, none of which named a source, were removed rather than replaced with Indian ones.
EVERY PLATE IS A MAP
Food does three jobs at once. It fuels the body — breathing, digesting, walking to school, staying warm on a January morning. It supplies the material a growing body is built out of, and the material it repairs itself with. And it keeps the immune system able to fight. Stop any of the three and the body starts spending its own reserves. Everything that does those jobs comes from two places: plants and animals. Every item on a thali goes back to one or the other — and then further back: a field, a pond, a shed, a tree, in one district, in one season. Most children can name the dish. Far fewer can name the field. That gap is what this chapter is for.
Two sources, then. Take them one at a time, and keep putting the same question to each: where, exactly?
What comes from animals
Milk, and the long list that comes out of milk: dahi, chaach, paneer, khoya, ghee, the malai off the top. Eggs. Fish from a river, a tank or the sea. Meat. Honey, which an animal makes and a person only collects. These foods carry protein and fat, and some vitamins and minerals that are hard to get from plants alone. They are also a different kind of security: a family that keeps one milch animal or a few hens has something to eat and something to sell on a day when there is no work. Ask the class who has an animal at home, and what it gives.
What are the foods obtained from plants?
Nearly everything else. Rice and wheat, jowar, bajra and ragi. Dals — arhar, moong, chana, masoor, urad. Vegetables and fruit. Oil pressed from mustard, groundnut, coconut and til. Sugar from cane. Tea, coffee, and every spice in the masala dabba. Salt is the odd one out: it comes from neither plants nor animals, but from seawater and from rock.
Most edible plants never reach a plate
The world is full of plants people can eat. Only a handful are grown at any scale; everything else sits outside the market — wild greens, forest fruit, grains a grandmother can name and a shop cannot sell. India has a great many of them. Bathua, chaulai, kulfa and sahjan grow like weeds and get pulled out like weeds. Ber, jamun, imli, karonda, mahua and chironji are eaten where they grow and nowhere else at all. A food with no supply chain is not the same as a food with no value.
We eat every part of a plant, depending on the plant. Roots: mooli, gajar, chukandar, shakarkandi. Stems, including the fat underground ones everybody calls vegetables: ganna, aloo, arbi, adrak, haldi. Leaves: palak, methi, sarson, bathua, curry patta. Flowers: gobhi, kachnar, kele ka phool, the sahjan flowers that go into a poriyal. Seeds: every dal, every oilseed, til and jeera and ajwain. Fruits: aam, kela, tamatar, bhindi, kaddu, karela — several of which get sold as vegetables at the mandi and are fruits to the plant.
What food is made of is the same everywhere: carbohydrate, protein, fat, vitamins, minerals, fibre and water. What changes is which crop carries them, what a household can afford, and when. Season is the part a city forgets. Mango arrives in summer and goes. Sarson, methi, palak and matar belong to winter; the gourds belong to the rains; jamun gets a few weeks and is finished. Fresh matar in January came from a field near you. Matar in June came out of a freezer or a packet, and something carried it there. Same vegetable, different journey, different price. Ask the class to name one thing they can eat only at one time of year — then ask a grandmother the same question, and notice how much longer her list is.
A small number of crops carry most of the load, here as everywhere. Rice and wheat fill most plates in this country: the same grain turned into bhaat, idli, dosa and poha on one side, roti, paratha, puri and dalia on the other. That concentration is efficient, and it is fragile. When a country leans on two crops, a bad year for those two crops is a bad year for everyone. The millets that used to share the load — bajra, jowar, ragi, kodo, kutki — need less water and less good behaviour from the sky, and most of them went out of fashion before anyone asked them to.
PLANT PARTS AND ANIMAL PRODUCTS AS FOOD
Some plants feed you more than once. Mustard gives oil from the seed and saag from the leaf. A banana plant gives the fruit, the flower, the soft inner stem, and the leaf you eat off. Sahjan gives pods, leaves and flowers. Coconut gives water, flesh, oil, and the fibre in the jhaadu. Kaddu ke phool, dipped in rice batter and fried, are worth trying once with a class that thinks flowers are only for the mandir. Then set them a task: find a plant at home with two edible parts. Most kitchens have three or four.
What you eat has an effect on your body. It also has an effect on land, water and air, and those are not the same question. A crop can be good for the person eating it and hard on the district growing it. Paddy is grown in places where the water for it has to be pumped up from deep below the ground. Sugarcane drinks more than most crops and is grown in some of the driest parts of the country. Neither fact makes the crop a villain. Both make where to grow it a real decision, usually taken for reasons of price.
Sustainability is a word that has been worn smooth. Underneath it is a plain test: can this carry on? Can this field still grow food when the children in this room are grown? Can this well still be pumped? Can the family doing the growing still afford to do it? A practice that fails any of those is not sustainable, however green it looks in a photograph.
A sustainable diet is one the land, the water and the household can all keep supplying. It is affordable. It is food people want to eat and know how to cook. It is grown without wrecking the place it grows in, and it does not depend on water borrowed from a future nobody has met. Very little of this is new in India. A seasonal thali. A kitchen garden. Dal with rice, because together they do what neither does alone. Greens picked off a field edge on the way home. These were not lifestyle choices; they were how a house ate. A good deal of what now gets sold back to us as sustainable eating is a grandmother's kitchen with a price tag on it.
Why is a sustainable food supply important?
India grows a great deal of food. India also has people who do not get enough of it, and many more who get enough to fill a stomach but not enough to build a body — the plate is full and the meal is rice and salt. Those two facts sit together because hunger is usually not a shortage of grain. Grain can sit in a godown in one district while a family in the next one cuts a meal. What fails is access: the price in May, the distance to the shop, a ration card with somebody else's name on it, work that ended when the site shut. That distinction changes what you do about it, because growing more does not automatically feed anybody. Meanwhile the growing itself is getting harder, and farming is doing some of that to itself:
- Water. A field watered from a borewell is drawing on a store nobody can see the bottom of, and the rain puts it back more slowly than the pump takes it out.
- Land. Every field was something else first — forest, grassland, wetland, floodplain, grazing common. Clearing more land is the usual way to grow more food, and it is a one-way transaction.
- Fuel and smoke. Growing, moving, chilling, packing and cooking food all burn something, and so do the factories that make the fertiliser. A field of stubble set alight in November is a food decision that ends up in a child's lungs in Delhi.
- Wildlife. A landscape of one crop supports almost nothing except that crop. The birds and insects that lived around a mixed field — including the ones that pollinated it — do not live around a uniform one.
- Fish. A tank, a river or a stretch of coast can be fished faster than it refills, and the families who fish it feel that before anybody else does.
Farming is both a cause of environmental change and the first thing that change damages. The same farmer who clears a field with fire in November loses the crop to unseasonal hail in March. That loop is what this chapter is asking students to see — not so they feel guilty about lunch, but because a person who knows where their food comes from asks better questions of everyone who sells it to them.
